Tomatoes are packed with nutrients and are incredibly versatile in the kitchen. From adding vibrant color to your dishes to enhancing flavors with their natural sweetness and acidity, tomatoes do it all.
Personally, I love tomatoes raw. That’s why most of these tomato recipes are salads packed with juicy, sweet, ripe tomatoes. This Marinated Tomato and Onion Salad is my favorite!
However, I do have a few cooked tomato recipes that are regulars in my healthy dinner rotation, like these vegetarian stuffed tomatoes with feta and mushrooms. That recipe is just plain delicious.
