Chicken

While I mainly focus on low-GI foods and high-protein, plant-based meals, I’ll happily make an exception now and then for chicken. It’s a lean source of high-quality protein, naturally low in fat (especially if you skip the skin), and packed with nutrients, making it a smart, satisfying choice for many diets.

Here, you’ll find all the delicious ways I love to cook with chicken, including fresh and colorful salads, cozy soups, hearty casseroles, and crowd-pleasing main dishes like yogurt-marinated chicken kebabs.

One of my all-time favorite dinners? A perfectly pan-seared chicken breast topped with spinach and goat cheese – it’s so easy and so satisfying!
