Bright orange persimmons are one of my favorite cold-weather fruits. When perfectly ripe, they have a jammy texture and rich, honey-like sweetness that tastes like a cross between a mango and an apricot with hints of cinnamon.
I love snacking on fiber-rich permission slices, but they’re also delightful in savory salads for a pop of sweetness – try tossing them with arugula and goat cheese, shaved fennel and parmesan, or in this Kale and Beet Salad.
That said, baking persimmons is where the magic really happens. When roasted until soft and caramelized, they take on an almost custardy texture that’s perfect in galettes, crisps, and even oatmeal.
