Kale

Kale absolutely deserves its superfood status. It’s one of those powerhouse greens packed with fiber, antioxidants, and essential vitamins that belong in any healthy diet or meal plan. You’ll find several varieties, from curly kale to Tuscan (also called Lacinato or dinosaur kale), and even the frilly-leafed Red Russian kind.

Cooking kale mellows out its flavor and softens the texture, making it an excellent match for recipes like soups, stews, stir-fries, and grain bowls. However, I honestly prefer enjoying it raw for maximum nutrition, and when I’ve got a bunch in the fridge, I’m tossing it into just about everything!

Kale is my go-to fresh green for vibrant salads, healthy smoothies, or even fresh juice! Whether you’re new to kale or already a fan, you’ll find plenty of easy and delicious ways to use it right here.
