Rutabaga is a low-carb, cruciferous root vegetable packed with awesome nutrients. It’s typically in season from late fall through early spring. If you’ve never tried it, imagine a cross between a buttery potato and an earthy turnip with just a hint of sweetness.
As for cooking it, you can mash it, roast it, boil it in soups, spiralize it into noodles, and so much more. I’m just getting started with rutabaga recipes, but the ones I’ve shared so far are all easy, flavorful, and totally worth a try. I promise, there’s more to come as I keep experimenting with this underrated veggie!
