Butternut squash is a sweet, nutty winter squash with smooth beige skin and vibrant orange flesh. It’s in season from early fall through winter, and when cooked just right, it becomes buttery, soft, and caramelized – imagine a cross between sweet potatoes and pumpkin. Not to mention, it’s packed with fiber, vitamin A, vitamin C, and potassium.
Beyond the impressive nutritional value, what I love most about butternut squash is all the cozy and comforting ways you can use it. You can cube and roast it, blend it into creamy soups, stuff it with grains and veggies, or even mash it into a creamy side dish.
So far, I’ve only scratched the surface with butternut squash recipes, but this is one versatile veggie I never get tired of cooking with. There’s plenty more to come!
