These No Bake Oatmeal Peanut Butter Bites are super easy to make and don’t require any baking. You only need a few ingredients that you probably already have on hand.

Yield:17 oatmeal peanut butter bites 1x
1 cup slow cooking rolled oats, divided into 3/4 cup + 1/4 cup
1/4 cup coconut oil
1/4 cup coconut sugar
1/4 cup your favorite non-dairy or cow’s milk (I used coconut milk)
1 tsp vanilla extract
1/4 cup chocolate powder
1/4 cup peanut butter
Grind 1/4 cup of rolled oats in a coffee grinder.
Place the coconut oil, coconut sugar, milk and vanilla extract into a small pot and bring it to a simmer over medium heat. Mix to combine and add the ground and regular rolled oats. Mix quickly to combine and turn off the heat. Cover the pot and let it sit on the hot stove for about 30 minutes to allow for the oatmeal to swell up a bit.
Add the chocolate powder and peanut butter. Mix well using a wooden spoon.
Cover a baking sheet with parchment paper. Scoop 1 tablespoon of the mixture, roll it into a ball and place on the baking sheet. Continue with the rest of the dough. Put the baking sheet in the fridge for at least 2 hours.
Store in the fridge in a glass container with a tight lid.
