Easy Chili with Veggies




  1. Heat the oil in a large pot over medium heat. Add the leeks and cook stirring frequently for 1 minute. Add the carrots and cook until the vegetables begin to caramelize, about 5 minutes.
  2. Add the ground turkey, stir well. Add paprika, dry basil, salt and pepper, stir and cook for about 5 minutes. Add the tomatoes and the vegetable stock and bring to a boil. Turn the heat to medium-low and simmer for 5 minutes.
  3. Add the black beans, artichoke hearts and parsley; stir and bring to a boil. Reduce the heat and simmer for 5 more minutes.
