Healthy Chocolate Waffles

These healthy chocolate waffles are perfect for a special occasion breakfast or brunch. Whether it’s Christmas morning, birthday, Valentine’s Day, Mother’s day, bridal shower, or brunch with friends, this chocolate waffle recipe will have you covered.

These chocolate waffles are everything you’ve imagined – they have a deep chocolate taste and are gently sweetened with maple syrup. The recipe is very easy to make and you can also make these waffles in advance.

Ingredients You’ll Need

In my opinion, the ingredients in this recipe are quite simple and easy to find in grocery stores or online. No exotic flour mixes or hard to find sweeteners are required to make these healthy chocolate waffles.

Here are a few notes about some of the ingredients:

1. Flour

These healthy chocolate waffles are made with whole spelt flour. I prefer to bake with spelt flour instead of whole wheat flour because spelt flour has a milder flavor. It’s also lighter resulting in fluffier waffles.

2. Chocolate

For a rich chocolaty flavor, this recipe uses two types of chocolate – Dutch-processed cocoa powder and dark 70% chocolate. I think it’s also possible to use 100% pure baker’s chocolate but then you would probably have to add more sweetener because this type of chocolate is very bitter and doesn’t have any sugar in it.

3. Milk

I think this recipe would work with any type of milk. However, I only tested it with regular cow’s milk, almond milk, and coconut milk.

4. Sweetener

I used maple syrup in this recipe. It will also work with coconut sugar, regular white sugar, or even honey (although, honey might add some distinct flavor to the waffles which is not necessarily a bad thing).

How to Make the Best Healthy Chocolate Waffles

In general, making any kind of waffles is quite easy. All you have to do is mix the dry ingredients, mix the wet ingredients and then combine them together.

And if you have any kind of waffle maker, you will make yourself waffles that, in most cases, will be much better than anything you buy at a grocery store.

But if you are interested to save time by avoiding common mistakes and make your waffles a little bit better, here are a few tips to help you take your waffles from good to great:

  • Sift the flour together with the baking powder. This helps to aerate the flour, break up the clumps and better distribute the baking powder in the batter.
  • Make sure all ingredients are room temperature. This will help to create a smoother batter;
  • Melt the chocolate together with the coconut oil. Coconut oil will melt faster and the residual heat will help to melt the chocolate;
  • Mix the batter only until it’s smooth and uniform because overmixing can result in tougher waffles;
  • Add the batter to a preheated waffle maker;
  • Make one test waffle to see how much batter you need to add to your waffle maker and how long it takes for the waffle to bake properly;
  • You can control how soft or crispy your waffles are. For softer waffles, take them out of the waffle maker when they are just done. For crispier waffles, bake them a bit longer;
  • Cool the waffles on a cooling rack to allow the air to circulate around the waffles.

How to Store, Freeze, and Reheat These Chocolate Waffles

These waffles taste best when they are super fresh out of the waffle maker. But they can also be stored in the fridge for a few days or you can freeze them.

I warm up the waffles out of the fridge in a regular toaster. You can also put them in a warm oven for a few minutes. Warmed up waffles are usually a little bit on the dry side but still delicious.

These waffles can also be frozen and kept in the freezer for up to 3 months.

If you plan to store your waffles, make sure to take them out of the waffle make when they are just done. This will prevent them from getting too dry when you reheat them.

Serving Ideas

Although I made an effort to make these chocolate waffles a little bit healthier than the average waffle you get at a grocery store, any waffle is just as healthy as the toppings you put on it.

You can soak your waffle in a sugary syrup and call it a healthy breakfast but it’s just not going to be the right thing to do.

Depending on the toppings, these chocolate waffles can be served as breakfast or dessert. Here are a few topping ideas for you to choose from:

Breakfast Topping Ideas for Healthy Chocolate Waffles:

  • Plain or unsweetened vanilla yogurt, granola, and chopped strawberries;
  • Almond butter, apple slices, and a pinch of cinnamon;
  • Cashew butter with cherry compote or fresh cherries;
  • Almond butter with chopped dates;
  • Nut butter, granola, and banana slices;
  • Coconut butter with sliced kiwi.

Dessert Topping Ideas for Healthy Chocolate Waffles:

  • Cashew butter and banana slices drizzled with maple syrup, honey or melted chocolate;
  • Raspberries and chopped walnuts drizzled with maple syrup or honey;
  • Vanilla ice cream with chopped strawberries drizzled with melted chocolate;
  • Chocolate ice cream topped with fresh cherries;
  • Raspberry sauce sprinkled with chocolate chunks.

How to Serve These Chocolate Waffles as in the Photos

I am a big fan of the chocolate and raspberry flavor combination and couldn’t resist dressing these waffles in all this raspberry-chocolate goodness for the photoshoot.

If you would like to serve the waffles as in the photos, you will need:

  • 1 cup fresh raspberries to top the waffles
  • 1/2 pound fresh or frozen raspberries for the raspberry sauce
  • 1 Tbsp maple syrup for the raspberry sauce
  • 2 oz/60 gr good quality dark chocolate for the chocolate sauce
  • 1 tsp coconut oil for the chocolate sauce

Once you have all the ingredients ready, make the 2-Ingredient Raspberry Sauce (just click the link for the step-by-step instructions).

For the chocolate sauce, melt the chocolate together with the coconut oil and mix to combine. Serve warm, otherwise, it will harden.

To decorate the waffles, place the fresh raspberries on top of the waffles and drizzle with the chocolate sauce, raspberry sauce, or both. Serve immediately.

These healthy chocolate waffles are perfect for a special occasion breakfast or brunch. They keep well in the fridge for a couple of days and can also be frozen. This recipe is very easy to make using simple ingredients.

Ingredients

  • 1 1/2 cup whole spelt flour
  • 1 tsp aluminum free baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 oz/30 gr dark 70% chocolate
  • 2 Tbsp coconut oil
  • 1 1/4 cup your favorite non-dairy or cow's milk
  • 1/3 cup maple syrup
  • 2 eggs, beaten
  • 1 tsp vanilla extract

Instructions

  1. Sift the whole spelt flour together with baking powder into a large bowl.
  2. Add the cocoa powder and salt. Mix well to combine.
  3. Carefully melt the chocolate together with coconut oil.
  4. In a medium bowl, add the milk, chocolate and coconut oil mixture, maple syrup, eggs, and vanilla extract. Whisk to combine.
  5. Add the wet ingredients to the dry ingredients stirring just until combined.
  6. Bake the waffles following the instructions of your waffle maker.

Notes

1. The number of waffles you get from this recipe depends on your waffle maker. I used 1/4 cup of batter to make 1 waffle.

Maria - these look so amazingly delicious and surprisingly good for you! I've never splurged on a waffle maker because I couldn't figure out how to make waffles healthier - I might have to get one now :)
